Bioactive compounds in and antioxidant activity of camu-camu fruits harvested at different maturation stages during postharvest storage

The present study was carried out to evaluate the antioxidant activity of and content bioactive compounds in camu-camu fruits harvested at different maturation stages stored. were municipality Cantá, Roraima State, Brazil. experimental design completely randomized, with three replications, a factorial arrangement consisting (immature, semi-mature mature) eight days storage (3 x 8). analysed every day regarding total vitamin C, carotenoids, anthocyanins, flavonoids, phenolic compounds, (FRAP DPPH). According results obtained, interaction had significant effect according F test 5% probability. highest (FRAP) observed stage, providing longer shelf life. carotenoid pigment, flavonoid, anthocyanin, C contents higher mature this stage most suitable for obtaining these functional biocompounds. Additionally, fruits, mean phenolics (DPPH) during storage. It concluded that is recommended extraction pigments biocompounds from fruits.
